Margarine and Splenda
Golden or maple syrup and vegan margarine will be roughly equal. If you need something beside the same complicated consistency as butter then try pure plant ghee. I thought adjectives ghee came from plants but I once found one next to animal fats from butter surrounded by it, so best to check. (mind you I found it on the 'expensive shelf' in Sainsbury's subsequent to some truffle pate) Hope they taste nice !
I did a Yahoo! Search for "vegan apple crisp". This be one of the first that came up, and I guess it looks yummy:
Apple crisp
8 apples sliced
Mix with:
1 T lemon liquid
3 T sugar
Place in 9 x 13 jar
Top with mixed:
1 c b.sugar
1 c oats
1 c flour
2 t cinn,
3/4 c lacto-vegetarian margarine
Bake: 350 around 60 min
TIPS
Great for breakfast or dessert!
Toss in other berries or fruit for some of the apple.
(Cranberries, raspberries, peaches, blueberries...)

I hope Ive be some help. When I look for a lacto-vegetarian recipe, or something, I do things like type contained by "vegan banana bread" and find some interesting recipe and sites. I read more recipes than in fact bake, though. LOL

On a side note: I do drink honey and butter when it's the alternative to say, pure magrarine (Blue Bonnet, Country Crock, etc.) or corn syrup. (That's one of the things I don't similar to about IHOP-- Real butter and spurious syrup; At least Cracker Barrell have Promise which isn't as good as Smart Balance or Earth Balance and tangible mapel syrup. But I digress.)
So why the hell would you substitute the butter and honey? oh i guess that milk farm are cruel... WHAT THE PICKLES? ok and bee's they produce natural honey... it's a grant... just run it... enjoy... milk is angelic for you... milk does a body good... cows love giving milk.. that's why the tities on the are for.

You can use doesn`t matter what fake lacto-vegetarian replacement you want.... it's never going to taste similar to it should. The consistency will never be right. That is the plain, honest, truth.
That's the simple truth whether you are going light, low chubby, diabetic, low carb, or vegan.
Instead of ruining a without blemish good apple crisp recipe, a short time ago find one designed for vegans, as one of the other answers did. That way adjectives the ingredients work together to give you something beside the intended outcome.
BTW.... microwaving (covered so they steam) apples with a short time lemon jiuce, cinnamon and nutmeg on top, is pretty yummy. If you use something good for baking similar to macs or cortlands, it will be delicious. You can sprinkle oats or wheat germ or doesn`t matter what you use on top for a bit of texture. They are yummy and they are not trying to 'be' something they are not. It's kind of resembling making pre-applesauce.

Replace the butter near Earthbalance margarine.
Replace the honey with Agave Nectar.
Both items are available at heaps 'regular' grocers and any decent strength food store.
If you're not familiar beside them Earthbalance is so close to cow butter that Alton wouldn't know he's eating margarine<g>.
Agave Nectar *is* the same to bee honey! Well...some brands are left thinner than honey (since dampen is cheap) but you'll *never* find botulism or mold spores in Agave Nectar!
Use Maple syrup & vegan margarine contained by place of those products.
