Thai Peanut Sauce and Basmati rice...

One of my favorite dishes, trouble-free to make and you can serve a fresh cucumber salad next to it too.
Yummy recipe here: http://www.suite101.com/article.cfm/hot_...
A roasted vegi soup would be trouble-free and good. Find correct quality winter vegi and pepper. Cut them into equal size pieces, toss them with olive grease, salt & pepper, and any fresh herb. Roast them in the oven at 350 for 20 minutes or until carmelized. (It will cook accourding to vegi size). Add cooked vegi's to a substantial stock top cover with vegi stock or correct quality tomatoe liquid. Cook on medium low for 30 minutes. You could puree this for a glutinous smooth soup or leave chunky. I would serve this along near a good bread and cheese inspection. Good Luck!
Try Spaghetti Squash next to sauce.

Do a stir fry beside firm diced tofu and thin-sliced or diced veggies: carrots, brocolli, red pepper, snow peas, and mushrooms are delicious surrounded by combination.

When the veggies are crisp-tender and the tofu is heated through, add a couple of tablespoons of Thai peanut sauce and sprinkle near cashew halves. Serve over rice.

For sides, you can serve fruit salad and some breadsticks.
