Make a stir fry- chop up carrots, broccoli, celery, mushrooms- make the addition of a can of water chestnuts and next add shrimp. Use a soy or ginger sauce. Serve over white, brown, or jasmine rice.
A lot of the frozen veggie companies close to Birds Eye and Green Giant also have stir fry mixes- this save time on chopping. And some even come with sauces included.
Grilled Eggplant wtih Peanut Miso Sauce
1 surrounding substance eggplant, peeled and cut crosswise into 1-inch gluey slices
Vegetable oil 1 recipe
Peanut Miso Sauce (see separate recipe)
Brush eggplant slices next to vegetable oil.
Place slices within center of cooking grate; grill 10 minutes, turn; grill another 5 minutes.
Spread sauce on top side of each eggplant slice.
Grill 5 minutes or until sauce begin to speckle.
Sweet and Hot Marinated Tofu & Veggie Kabobs
Marinade time: 4 hours
1 lb. extra-firm tofu, cut into 1-inch cubes
3/4 cup lemon juice
3/4 cup soy sauce
1/4 cup olive grease
1/4 cup light brown sugar
9 garlic cloves minced
1/4 cup hot sauce (for milder mix 1/2 and 1/2 French dressing)
1 cup thaw orange liquid concentrate, undiluted
2 teaspoons grated lime rind
1/2 cup fresh lime juice
1/2 cup fluid sweetener of choice, eg: maple syrup
4 teaspoons ground cumin
1/2 teaspoon salt
6 garlic cloves, minced
4 jalapenos, seed and chopped
4 red bell peppers, cut into 1-inch cubes
Other vegetables of choice: zucchini, small potatoes, eggplant, onion
Lime wedge (optional)
Cooking spray
1. Combine all ingredients contained by a large zip-top plastic backpack; seal and marinate surrounded by refrigerator 30 minutes.
Remove tofu from bag, reserving marinade.
Thread the tofu, bell pepper cubes, and lime wedge (if desired) onto 12 skewers.
2. Prepare grill or broiler.
Place skewers on grill rack or broiler pan coated next to cooking spray; cook 4 minutes on each side or until done, basting frequently next to the marinade.
Yield: 12 servings (serving size: 1 kebab).

Organic Wild Rice
Organic Baby Lettuce

Preparation:
Prepare the wild rice according to manufacturer's insructions.
Toss a salad of natural baby lettuce, avocado, cherry tomatoes and top beside a vinaigrette dressing.
Sauté our fillets near fresh cut veggies, like onions, bell pepper, or squash over LOW heat for 7 - 10 minutes.
Add a trimmings of fresh thyme or parsley.
