It's not where they come from; it's a culinary permanent status for how the potatoes are cut. The verb "to french" means to cut within long, thin strips.

However, this website say no to that idea; that french fried potatoes really did come from France. Click on the correlation below.
I own no idea but surrounded by France they are called "Pommes frites"
As I know, they are from Belgium and as I know they speak French in Belgium, so perchance this is the reason :-)
