Any honest philosophy for wheat free veggie food??

Personally, I can't accept a "no" when I have need of something, so I just find a approach around it. I don't mind the occasional sitdown meal or snack, but I LOVE sandwich. I had to become primarily lacto-vegetarian for my hyperuricemia (no wheat allowed), but I go to Jimmy Johns every time for their veggie club... french bread rolls w/cheese, veggies, avocado spread and no problems; they even deliver for those days I'm not feeling economically... If you don't have a franchise in the vicinity you, technically you could make it yourself w/stuff from your grocery store, even clear your own bread. There are several chains (including JJ's) that sell lettuce wraps sandwich now or you can construct those on your own too. Also, you can make veggie breads w/o wheat... pumpkin, banana, zucchini, carrot...

I discern your pain. Lunches in need sandwiches can be a dare, but you can buy bread made of rice or oat flour instead of wheat flour. Super thin corn tortillas can be occupied and rolled for rollups.
If you're ambitious, you can make your own bread from rice, oat, or any other flour. Be sure that you don't expect like texture as wheat flour bread, but rice flour produces a really nice light bread.
A nice lunch does not enjoy to include a sandwich, though. During hot months, a cold soup is delicious near crunchy veggies. OR you can take your favorite cabbage rolls, chock-full with your favorite things, a stuffed tomato, roll some favorite spread on huge loose lettuce leaves, add your favorite things..grated carrot, cheese (if you get through it). sprouts, roasted veggies...whatever your heart desires....and roll it up.
You can also generate "mini" sandwiches from rice crackers (not rice cakes).
Room temp salads, chock full of fresh veggies, beans, couscous, rice or rice noodles are a lovely lunch...only just be sure to add great seasonings...mint, basil, peanut sauce...anything that does not need refrigeration.
