Here are some ideas. I don't use alot of recipe, but these are easy and near are many recipe for the cauli rice all over the lattice : )
Chicken Parm - Quorn naked cutlets or other chik'n sub near no sugar added marinara, mozzerella and parm. Bake at 350 until cheese bubbles and begins to brown. Serve next to Italian flat green beans and cauliflower "rice"
Beef and broccoli stir fry: Morningstar Farms "steak" strips, broccoli, onions, red bell, orange bell and mushrooms beside sugar free teriyaki sauce on cauliflower "fried rice" topped with scallions and cashews, peanuts or almonds. (use veggie stock for the "rice")
Taco salad: seasoned Boca crumbles, black soy beans (drained/rinsed), shredded lettuce, cheese, guacamole, salsa, and sour cream, scallions, black olives.
If you are looking for fitting Low Carb Vegetarian cookbooks, get the ones by Celia Brooks Brown or Rose Elliott, they are the single ones that actually follow the rules.
