Pepper add a bite to otherwise bland lettuce. Be careful when calculation to sharper greens such as radichio and endive, since these already have a fairly bitter flavor. You can always make a payment pepper to any salad you plan on serving with a creamy-type dressing, since the creaminess will cover for the tang of the pepper. OH-YEAH... and incontestably on a Ceasar Salad. Everyone is at their own with pepper so it should never be put on earlier unless in a place where on earth it is served like that on the menu. I'm a git-yer-wrist sore pepper lover. The waiter usually simply gets tired and walk away, but pepper should never be the main flavor of your salad since it defeat the purpose.
