Bought beef steaks from the supermarket but when dividing them up one has a significant blue/grey spot on it. They are well in their dates. Is it still ok to get through it or should I chuck it out?

That is fine. Have seen that myself plenty of times, ate the meat and be fine. My mom told me once that is from when they stamp the beef near a grade.
i thin kit's fine, only just cut off and discard the spot if you're concerned

If you be a butcher and you saw that you'd toss it right into the vat of red dye they use to keep meat looking "fresh". It's fine.
