Why do some foods step soft and some knotty?

why do crisps and biscuits go soft when exposed to nouns but bread and rolls go frozen?

Answers:
Maybe its something to do with relative humidity.Crisps are intensely dry , so they take on marine from the air.Bread is more humid , so it dries out .No belief really , good give somebody the third degree

I'm thinkin its the moisture content of the food.
