The icing is made from icing sugar and for a while water to gross a paste and poured over the cooked cake. Muffins usually have a tsp of bicarb added to the mixture to kind it it lighter and are less sweet. The matured fashioned English muffin, popular before crumpets come into fashion are not one and the same as the the now popular sweet American type muffin and have no extra icing on it. Chocolate is a good choice for a more moist result.
