Does anyone know anything more or less mandarin provolone? Is it different than auricchio?

I have be told it's the creme de la creme...what makes it so different from other provolones?

This Provolone is produced from selected cow milk by using the f¨ēted "Auricchio mild rennet", which allows to maintain the intricacy of this cheese
The origin of Provolone is considered to be within the southern part of Italy, however, it is unachievable to assign a particular region of source.
It is ideal as a cooking ingredient. You can use it on a pizza, thaw it on meat or slice for a delicious toast.
'Dolce' (sweet) is the mild altered copy of provolone cheese, whereas 'piccante' (spicy) is its spicy and more aged version.
