I believe it's mole. Here's a recipe:
Chicken with Mole Sauce
Ingredients:
1 1/2 pound Boneless, Skinless Chicken Pieces -- cut contained by strips
1 Onion -- chopped
1 clove Garlic -- chopped
6 ounces Dry Sherry
Salt and Pepper
Bay Leaf
Cloves, to taste
Cinnamon, to aroma
Thyme, to taste
2 tablespoons Unsweetened Cocoa Powder


Directions:

Sprinkle chicken strips next to spices. Add garlic and sherry and let marinate. Heat grease in a saucepan and brown chicken pieces. Add onion and verbs cooking over low heat. Add marinade. Cook 20 minutes. Stir surrounded by cocoa. Cook 10 minutes. Remove chicken with slotted spoon. Reduce sauce, serve over chicken.

Chicken Mole Recipes

Ingredients:
1 Roaster Chicken, skin removed.
6 cups chicken stock
20 dried chili peppers, guajillo, pasilla, mulatto, chipotle stemmed, release seeds
1 onion, quarter
1 head garlic
2 tablespoons almonds
2 tablespoons peanuts
3 tablespoons grease
2 teaspoons raisins
1 slice bread
1 plantain or banana
1/2 cup sesame seeds
2 pecan halves
1 (1") cinnamon stick
2 together peppercorns
2 cloves
2 tomatoes, chopped
5 tomatillos, chopped
1/2 teaspoon oregano
1/2 teaspoon thyme
2 ounces Mexican chocolate (Ibarra) or bitter chocolate
2 tablespoons sugar
1 bay fern
Salt to taste


Directions:

* Make chicken: Celery, carrot, onion, and bay branch. Water to just cover chicken. Remove bird, boil wet, add chicken, re-boil, cover, 2 minutes. Take bad heat, permit sit 1 hour. Remove bird, re-simmer stock and reduce.

Toast pepper dry, cover with hot sea, 30 minutes, then puree surrounded by blender adding soaking wet for a paste. Save. Saute garlic and onion, same tub.

Save. Toast almonds and peanuts. Save. Toast chili seeds, Save. Saute raisins contained by oil until plump, Save. Fry bread till brown . Save. Fry plantain (or banana) Save. Fry sesame seed until brown, Save. Fry pecans,

Save. Toast cinnamon, peppercorns, cloves dry, then grind. Saute tomatoes and tomatillos. REMOVE Food process contained by batches if required: nuts, sesame seeds, bread, pecans, consequently onion, garlic, plantain (banana), add soft stock. REMOVE. Process tomatoes, tomatillos and chili seeds. Large pot, make a payment chili paste. Add tomato until dry. Add ground spices, nuts, bread, pureed onion mix, oregano, thyme, and simmer. Add chocolate. Roast the firth leaf and add on to pot. Add chicken stock, simmer until thick. Add saline and pepper Add chicken, simmer for 5 minutes.

my mom makes it but i'm not a big adherent of it even though i'm mexican.
