The best Filipino dish I could think of that have no meat and can be eaten surrounded by room temp.: Lumpia and Pancit

FRESH LUMPIA

Lumpia Filling
1 bundle of asparagus, peeled and lightly sliced
1/2 Napa cabbage
2 cups beansprouts
1 carrots, peel
1 jicima (singkamas)
12 pcs snowpeas 2 leeks
12 fresh shiitake mushrooms
3 cloves garlic, minced
3 tbsp canola or peanut oil
Slice vegetables (matchstick size). Combine adjectives the vegetables and stir fry with the garlic surrounded by a largle skillet or wok. Season with fish sauce and black pepper.

Peanut Sauce
1 cup peanuts, roasted and ground
1 lemongrass, minced
3 shallots, minced
2 inch ginger, minced
1 tbsp peanut grease 1 cup coconut milk
1 tbsp chili sauce
1 tbsp soy sauce
1 tbsp fish sauce
Lightly brown the lemongrass, shallots, and ginger in a small pot near peanut oil. Add the peanuts and coconut milk. Simmer for 5 minutes. Season beside the chili sauce, soy sauce and fish sauce.

To assemble: Wash, dry and select lettuce leaves (lollo rosso, red oak, baby romaine recommended). Lay out wrapper on plate. Arrange leaves on top of wrapper. Put filling and fold wrapper. Pour peanut sauce on lumpia and serve.


PANSCIT GUISADO

1/2 cup minced onion
1 tablespoon minced garlic
2 tablespoons grease
2 Chinese sausages (lop cheong), sliced thinly
1 cup carrot cut julienne
1 cup thinly sliced celery
1 cup shredded cabbage or Chinese cabbage
2 tablespoons soy sauce
1 tablespoon fish sauce (patis)
1 pound fresh Chinese egg noodles
2 teaspoons sesame grease
freshly ground black pepper
1/4 cup sliced scallions

Heat oil within a wok. Add onion and garlic and stir-fry until onion is soft. Add Chinese sausage. Stir-fry until browned. Add vegetables. Stir-fry until vegetables are crisp-tender and shrimp turn pink. Add soy sauce, and fish sauce. Stir-fry until heated through.

Meanwhile, cook noodles in boiling river just until tender (about 2 minutes). Drain. Add cooked noodles to the meat-and-vegetable mixture within the wok; toss to mix well and reheat. Drizzle on sesame grease and sprinkle with pepper and scallions; toss again.

1 cup diced fresh pineapple
1 cup watermelon ball
1 cup cantaloupe balls
1/2 cup diced ripe mango
1/2 cup avocado cubes
1 cup shredded fresh macapuno
1-1/2 cups preserved kaong (sugar palm)
1/4 cup coarsely chopped cashew nuts or peanuts
3 tablespoons lemon liquid
1 can condensed milk or fresh cream
1/4 cup flaked coconut
Directions
Combine the fruits, the preserves, and the nuts in a bowl. Sprinkle near lemon juice. Pour surrounded by the condensed milk or the cream. Toss lightly and donate the flaked coconut. Chill.
