Do you use cardamom for cooking briyani rice n what are the other spices used?


And are there any other savoury recipe which involves the use of star anise, cloves and cinnamon?

I use for Briyani rice cardamom, 3 Whole cloves, 1 cinnamon stick, Ginger powder, Rose water or rose essence, Salt and strong chicken stock

What give or take a few this recipe for an entree? Lamb Rice Pilaf (Great on a cold winter night!)

2 lbs lamb chops
2 tbsp hot curry mash, divided
2 tbsp butter
1 onion, chopped
2 cloves garlic, minced
2 tsp grated gingerroot
4 cardamom pods
1 small cinnamon stick
1 star anise
4 whole cloves
1/2 tsp saline
1-1/2 cups USA Basmati rice
3 cups chicken broth
1 cup frozen peas, thawed
1/4 cup fresh coriander leaves

Rub both sides of lamb chops near 1 tbsp curry paste. Set aside.

In immense deep skillet, warmth butter over medium illustrious heat; sear lamb on both sides until golden, in the order of 3 minutes per side. Transfer to plate and tent with foil to save warm.

Add onion, garlic, remaining curry pulp, ginger, cardamom, cinnamon, star anise, cloves and salt to the skillet. Cook, stirring repeatedly, until onion is softened, about 5 minutes. Stir contained by rice and broth; bring to boil. Cover, reduce fry and simmer until broth has be absorbed and rice is tender, in the order of 17 minutes.

Discard cardamom, cloves, cinnamon and star anise. Fluff rice with fork. Sprinkle peas over rice. Nestle lamb into rice; cook until heat up, about 2 minutes. Transfer to serving platter and sprinkle next to coriander.

Makes 4 servings.
