My family and I be stationed in Japan some strange years ago and I ate this soup that still to this day if I close my eyes I can tang it. It had adjectives kinds of stuff surrounded by it and noodles. It was fantastic and I would love to net it for my family presently. I talk just about every time we have something Japanese. Soba Noodle Soup
Ingredients:
8 ounces shrimp, peeled and deveined
8 ounces soba noodles
2 cups chicken stock
1/4 cup soy sauce, to appetite
1/4 cup mirin
2 teaspoons sugar
1/2 teaspoon instant dashi stock
2 scallions, sliced
Steps:
1. Cook soba in boiling hose down for 4-5 minutes until done.
2. Meanwhile heat stock, soy, mirin, sugar, dashi to boil surrounded by a saucepan.
3. Add shrimp, cook for 2 minutes until cooked through.
4. Drain soba, divide between 2 bowls pour shrimp and soup over noodles, top with scallions, serve.
