African dishes?

does anyone know if there have been any traditonal african dishes (recipes) that own become
completely "americanized"?

Answers:
Injera is sometimes made without teff flour (a/p or other flours and not made by fermenting?)...within the homes or restaurants where it is made...teff flour is not undemanding to come by...
