At the place where we stir, they use plates that they can put in the oven so, when they cook cheese over burritos and whatnot, they just stick the entire plate contained by the oven. Otherwise, they could have bake lamps contained by the window to hold on to food warm until the food get delivered to your table. I don't focus they would use a microwave, though I suppose it is possible.
they cook the spread on the plate. it makes it easier motivation picking up those enchilatas would make it thorny transfering from the oven to the plate.... without it getting adjectives messed up

No... it's not a microwave. After they plate the food, to defrost the cheese which is usually put on top, it's put under something call a salamander broiler. This quickly melt the cheese. They have a plate radiator that is plugged contained by holds about 50+ plates(various sizes) stacked surrounded by them and they are heated by steam. You'll see them at buffet places, banquets, chinese buffet etc. Some may even use the steam table where on earth prepped food is kept
