If you want a sweet mild curry try a Korma. If you want a valid Hot curry try a dhansag. or a Vindaloo, but whatever you choose you can build them hot , mild which ever you chose by adding more or smaller number curry powder, and using either fish of any manner, to meat of anykind. good drinking.

Lamb Tikka Jal Frezi........the actual sauce isn't that hot, but next you bite into a lovely piece of chilli pepper and your mouth is on fire for a while! To me it's the tastiest curry, served next to egg pilau rice and garlic nan bread, beautiful!
Lamb Saag Spinach Curry; the sauce is an evil green colour but it tastes great.
The one that each individuals finds they most like.
It's an individual choice.
