Corndogs
1 gallon peanut grease
1 cup yellow cornmeal
1 cup all-purpose flour
2 teaspoons kosher saline
1 teaspoon baking powder
1/4 teaspoon baking soda
1/2 teaspoon cayenne pepper
2 tablespoons (approximately 1 large) jalapeno pepper, seeded and finely minced
1 (8.5-ounce) can cream-style corn
1/3 cup finely grated onion
1 1/2 cups buttermilk
4 tablespoons cornstarch, for dredging
8 beef hot dogs
Special equipment: 8 sets chopsticks, not separated
Pour grease into a deep fryer or considerable heavy pot and bake to 375 degrees F. In a atmosphere mixing bowl, combine the cornmeal, flour, salt, baking powder, baking soda, and cayenne pepper. In a separate bowl, combine the jalapeno, corn, onion, and buttermilk. I hold found that the ones at any "fair" are the best. They are made with a cornmeal, egg and flour mixture that the hot dogs are dipped surrounded by and then adjectives fried. I usually wait for the trip up when I can go to a state unbiased and these are the best. Also, in the "old" days, they be called "Pronto Pups" which I believe you can still purchase the dry mix at grocery stores and trademark your own this way too. You can also find recipe for them in most cookbooks but for the best corn dogs, they other taste better at the state gala!!
