Time required to prepare Greek Menu?

Menu consists of Dolmades, Baklava, pastitsio and a couple other items. My boss tells me it can be done within my 8 hour shift. I think he's crazy. Given only just the 3 items I've mentioned, how long will this take?

if you're used to to these things, pastitsio would take you give or take a few 30-45 min's to prepare and approx 45 to bake. Baklava is a bit difficult but wouldn't require more that 1h30m to 2h to be organized to eat. dolmades is your nightmare grounds you have to create the filling and prepare respectively one separately that would require about 2-3 hours to prepare and cook. so your boss is correct you can do this within one shift as long as you have someone to dust the mesh you'll have to head off behind, so you can prepare something while baking an other. You don't hold to do it in a home style kitchen, do you?
It depends if you know what you are doing or not! Get your boss to show you how it can be done in that time!
To my knowledge that should one and only take up partially your shift. Bake the baklava and put in the fridge. While it's baking start the pastitsio, and the dolmades. Refrigerate the baklava while using any down time for assembling dolmades. Refrigerate those while finishing up the pastitsio.

Just break everything down into "what wants to be or can be done now or later". Don't in recent times work on one thing at a time. Eight hours is comfortable. You'll even have time excess unless the restaurant has some chance way of making something or you don't enjoy a prep cook.
Baklava prep time roughly speaking 15-20 min...cook time about like
Pastitsio has going on for the same prep time and in the order of 45 min cook time.
now...It's the Dolmathes that are a distress in the butt...
the prep time depends on the volume...the stuffing have to be mad...and it depends on if your making a plain stuffing or a meat stuffing.
respectively leaf beforehand stuffing has to enjoy the main stem cut out of it.
prep time 2-3 hrs
cook time 1 hour or so present or take.
If you time them adjectives correctly you can get them adjectives out together in almost 4 or 5 hours no problem.
