im awesome at cooking, but i need the right recipe!
im interested surrounded by cooking thai food, and the thai restaurant i love makes this really tender wan chicken curry w/ poetatoes and carrots and obviously chicken...and they also make this reeally worthy sweet and sour sauce with their sweet sour fish. they also gross really good thai chicken cashew/ beef cashew nut dish!
i look up thai recipe, but it doesn't taste duplicate. i look up stuff from EVERYWHERE. any one have a tried and true thai recipe?

Thai Yellow Chicken Curry
1/2 lb. Small red-skinned potatoes
1 lb. Boneless, skinless chicken breasts or thighs, or a combination of both, cut into 1-inch cubes
2 Tbsp. Vegetable grease
1 Tbsp. Grated fresh ginger
1 Tbsp. Minced Fresh Garlic
1 Tbsp. Yellow or Massaman curry paste (you can use more or smaller amount depending on how hot you like it!)
1 16 oz. can of coconut milk
1 teaspoon Brown sugar
1 Tbsp. Fish sauce (or more to taste)
Lime liquid
Fresh basil or cilantro to garnish
Cut the potatoes into 1-inch cubes and boil until lately fork tender (about 8 minutes.) Remove from heat and drain at once.
Heat the grease in a full-size skillet over medium roast. Add the chicken and saute until lightly browned. Add the garlic and ginger to the jar with the chicken, season beside salt and saute, stirring habitually until ginger and garlic is fragrant (be careful not to permit the garlic burn!)
Add the curry paste to the jar along with two tablespoons of the coconut milk. Stir everything until the curry blend is nice and fragrant (a few minutes.)
Add the rest of the coconut milk, potatoes and brown sugar to the pan, stir and permit simmer for about ten minutes. Do not agree to it come to a boil or the coconut milk will separate. Season to taste next to fish sauce and lime juice. Garnish beside fresh basil or cilantro and serve.
You can add other vegetables such as carrot, onion, bamboo shoots and eggplant. I usually a short time ago make it according to what I'm within the mood for or what I have on appendage.

1/4 cup lemon juice
1 tablespoon fish sauce
1 red onion sliced gauzily
1 cup coriander leaves
2 tablespoons shredded basil
lettuce leaves to serve
Heat the oil over dignified heat. Add the ginger, lemongrass and chilli and cook for 1 min. Then supply the chicken and cook, stirring to break up lumps, for 5 mins or until cooked.
Remove the chicken and cool. Combine the lemon juice and fish sauce, pour it over the chicken. Add the onion, coriander and basil. Serve the salad surrounded by small bowls with side plates of crisp lettuce leaves.
