Now, for the USA and Canada that's difficult because these are countries of immigrants. They don't really own any specific "ethnic" foods. Since the people contained by both countries have come from adjectives over the world, it's extremely diverse and I can't specifiy any particular foods that are purely American or Canadian except approaching macaroni and cheese and hot dogs.
Canadian, eh!... let's see

Poutine - Fries covered in curd cheese ( or shredded mozz) smother within hot beef gravy... yummmmmm
Fries n Gravy
Foods refer to staples for preparing dishes, in Mexico that would enjoy to be beans, corn and chiles, maybe cheese as very well, garlic, onions and tomatoes. Now if you were chitchat about dishes after you would have to count the tamale, the taco, pollo en mole (chicken mole), Chile Relleno (Stuffed Poblano Pepper), Huachinango a la Veracruzana (Red Snapper approaching they cook it in Veracruz, a Mexican port on the Atlantic Coast), Guacamole. Many things are prepared using the ingredients mentioned, I do not know if that be what you were asking.

Burritos, nachos, fajitas, salsa and chips and other Americanized Quasi Mexican stuff are not Mexican at adjectives.

Hope this helps.
México:

From Puebla: "Mole Poblano" or "Chiles en Nogada". "Chalupas Poblanas".
From Monterrey: "Cabrito" (goat). "Machacado con Huevo" (Egg beside dry meat).
From San Luis Potosí: "Enchiladas Potosinas".
From Mazatlán: "Huachinango zarandeado".
From México City: "Bacalao" "ROmeritos" "Tamales borrachos".
From Guadalajara: "Birria".
