You can go to Macrocenter contained by Kanyon and get a sushi making utensils for about 30 YTL. They also trade dried seaweed, wasabe, and soy sauce. I don't know of any classes you can take, but you can find directions on the internet (and at hand are even directions in Turkish!). Good luck!

I don't know if you specifically wanted a place to walk to learn to roll sushi.. but in attendance are quite a few video on YouTube.. and videos can be more potent than reading or looking at pictures.
