ingredients:
300 g rice-straw mushrooms
1/2 cup thinly sliced boiled chicken
1/2 cup translucently sliced boiled prawn
1 onion sliced
1 thinly sliced red spur chilli
2 tbsp. fried shallot

ingredients for the dressing:
2 hot chillis
1 tbsp. finely sliced garlic
2 tbsp. saline
1/4 cup lime juice

pound the chillies, garlic, and brackish together until finely ground, add the lime liquid, and mix thoroughly.

preparation:
1) wash the mushrooms thoroughly and remove any foreign concern from the bases of the stems. steam over boiling wet for about 10 minutes; after, place in a colander and allow to drain.
2) put the mushrooms contained by a mixing bowl, add the chicken, prawn, onion, make the addition of the dressing, and toss gently to mix thoroughly. adjust the seasoning.
3) verbs the salad to a bed of lettuce prepared on a serving platter, sprinkle with the fried shallot and spur chilli, and serve.

Curries are easy. You can buy a tub of green, pale or red Thai curry pastes. The directions should be on the tub.

If not, thaw up a couple of tbs of the paste within a bit of oil over low warmness.

Add 1 cup of coconut milk, heat again until fragrant.

Add another cup of coconut milk mixed next to 1 cup of water. Heat. Then attach sliced chicken (1/2 lb or so), thai eggplant or cubed regular eggplant and 2 tsps of fish sauce.

You could get more complicated and add different veggies or flavorings such as kaffir lime leaves, Thai eggplant, straw mushrooms or chillis but the above is a simple recipe that'll tide you over.

The secretive to great Thai food is great Thai pastes and sauces. You can buy red, green & sickly paste surrounded by little cans anywhere that have "Asian groceries", boil them with coconut milk and meat or veg of your choice and it'll be great.
