Is at hand a national registry of chefs licensed to prepare puffer fish?

i want to try mugu gi pan(sp?) but i can't find a listing for qualified chefs within my state.

It's called "fugu." Yes you enjoy to be certified to prepare it. There are very few restaurants that serve it within the U.S. The dangers are greatly exaggerated. The poison is mostly surrounded by the internal organs and skin. Very, very few culture die from it. Those that do usually prepared it themselves and/or intentionally ate the dangerous parts. You can find fugu surrounded by N.Y.C. or Seattle.

In Japan they inevitability to be licenced and the enrails and bones are kept locked in a container and are destroyed by insineration, the fugu served in the US is fillet and has be processed, it is illegal to fish them surrounded by North America.
