I use ground pork. You can request your grocer to "double grind" it for a better texture (just have him overrun a batch of already ground pork through the grinder again).
Saute chopped garlic and onions and the pork, add on taco seasoning (though this is also good near just saline, a bit of lime juice and worcestershire sauce) and cook until done. Turn rotten the heat and when a bit cooled, toss within some fressly chopped cilantro and eat as Poutine said.
