Not sure what Oyster Cake is to you, but I make what my relatives always call Scalloped Oysters. It is basically matching recipe used to make Salmon Loaf or Salmon Cakes so possibly it is the same entity.
I empty 3, 8 oz can Oysters & liquid into a loaf jar. Add 2 beaten eggs & 2 Tablespoons milk. Sprinkle near salt and incorporate about 1/3 teas pepper. Mix together. Add 1 & 1/3 bunch crushed saltines. (The tall pkg of saltines that come 4 within a box) Mix all of this together till most of the gooey is absorbed by the saltines. You want it to be moist but not soupy. Add milk or saltines suitably . Dot top of casserole with several teaspoons of margarine. Bake contained by a preheated 400 degree oven till brown almost 35-45 minutes.
Like I said I use the same recipe for salmon cake, except I pan fry this within a skillet with butter till brown on both sides.
