The dishes prepared here may not be exact replicas, but that's mostly because of availability of ingredients.
Getting your hands on "exotic" ingredients isn't too knotty nowadays, but dream up about your ancestors who immigrated here hundreds of years ago. If your great-grandmother required to make broccoli rabe, she would own had a really strong time getting rapini in the US. There be no Wegman's, and definitely no internet.
