its supposed to be crab meat, but its usually some white fish that is made to be approaching crabmeat

those ingrediants wrapped around a seafood, generally crab meat. I own also seen carrot mixed in near the rice.

The California roll is a Maki-zushi (roll), a benign of sushi, usually made inside-out, containing cucumber, imitation crab stick, and avocado. Sometimes crab salad is substituted for the crab stick, and regularly the outer layer of rice (in an inside-out roll) is sprinkled next to toasted sesame seeds or tobiko.
Unless you live right on the coast, California Rolls will not have actual crab; they enjoy fish, called pollock, that penchant like crab but are much cheaper. The typical California Roll have sushi rice, seaweed, mayonnaise, and sometimes avocado. It depends where you catch it at.

some differ, but most are crab, seaweed and avacado, some restaurants substitue cucumber for the avacado however, and logically the rice!
the rice within the calfornia roll has japanese rice wine vinegar and the inside have cucumber, imitation crab meat,and avocado. sometimes you will find mayo surrounded by it or this orange colored caviar on the outside of the roll. i hope this help you..i love these things!
