I'm not Mexican but grew up contained by Phoenix & I LOVE Mexican food, so I'm answering this anyway. :-) On enchiladas, I prefer red, but I also love green chile within alot of other food.
Are you from NM? That's the solely place I own hear the Red or Green grill used so much! :-)
