need suggestions on appetizers, biggest course and side dishes for a vegetarian delegation.....can i prepare all the stuff two days ahead and reheat?

Cheeses are a devout first course. Lots of crudites and dips can be prepared days before. Veggie lasagna can be prepared ahead and is accurate for a crowd. Sides: bread and a big salad.
I hold a lot of veggie friends and I other make different kind of dips for appetizers like avacado dip, three bean dip, etc. and serve it beside veggies, crackers, etc.
Main course... a nice BBQed Portabello mushroom, or some veggie lasagna is always nice. Or you could variety a nice pasta dish with a garlic sauce and some spinich and red pepper.
Sides could include, salads, rice, risotto, roasted potatoes, anything really...
it depends... if your vegetarian are not vegan, you will enjoy a lot more option.
for instance: macaroni & cheese (home made, baked in the oven) make a wonderful, filling major course - IF they eat dairy products... ditto beside eggplant parmesan, veggie lasagna (you can even thinly slice eggplant or zucchini longways and use those instead of noodles)... adjectives of which work great for a party, can be made ahead & baked only just before serving. Falafel near pitas, tomatoes and cucumbers would be a nice offering if the guests don't eat dairy.
