Seltzer, cranberry juice and OJ for non drinkers. As for cheese, draw from a few hard cheeses and a few softer ones. The cheese monger at your local store is your best bet for question.
For non-drinkers dance with sparkling cider or grape liquid. As for cheeses, I would use brie, smokey cheeses and really hearty ones because they will requirement to hold up their taste along side the bitter wines.
ever try making a cheese bubble rolled in crushed pecans? that will set it rotten also, accent the penchant of the wine....there is also a punch that you could serve for the non-wine drinkers, it's call "white sangria" you can make it lacking alcohol. It calls for a mixture of fruit juice and club soda or ginger ale....quite mouth-watering w/ cedar cheese
A block of blue cheese and crackers - very strong.
Cheddar - strong and expected.
Brie -s my favorite - cover it within sauteed mushrooms, garlic and fresh basil and wrap it in a crust made of crescent roll dough -bake it.
Now branch out into some surprises - soft bland cheese for sissys and something near a nice herb flavor.

There is no one booze that will please adjectives. If you want to limit that I would use vodka - OJ and tonic on foot.
Go to your local wine store that specializes surrounded by wine and spirits, they should be able to support you decide on the cheeses.
As for the non-drinkers as myself, we do similar to sparkling juices, regular fruit juice and cocktails, club soda with lime or lemon wedge, and soda.
I close to smoked cheddar cheese. Get some good smoked sausage too near some really good crackers and adjectives typed of mustards.

Feta cheese is a really polite one. You also should serve ritz cracker for a little crunch. For non booze drinkers, serve cider or ginger ale.
All the different types of cheese you can think of and a cavernous range of alcholic and non-alcoholic wines. When is the body call me lol
