My fiance' and I are working with a tight budget and I will be preparing the food myself. We will be entertaining approx 80 guest, and would resembling to serve a nice, but inexpensive lunch. Any ideas?

I don't know how tight your budget is, but you own a little time to prepare so here's my concept:
Get a few spiral hams (they're pre-cooked, only entail heating)
Bake an entire oven of potatoes in foil (packed contained by a box with weekly will stay hot! for a very long time)
A generous Basket of Rolls
Big Garden Salad (simple lettuce, tomatoes, cucumbers and celery) Get the large pre-bagged lettuces at Costco's or a similar store.
Coffee and Tea
Lemonaide
Wedding cake for dessert
I know I'd be chirpy if I were a guest.
Tea sandwich...scones...pasta salad...grilled chicken...etc...
Go with a brunch. That route you have more option. You can do fresh fruit, pastries, quiches, etc. You can also have meat and cheese trays, salads etc. Its fun and everyone loves it!!
try fresh fruit and veggie platters next to different dips, some kind of marinated (not glazed) grilled chicken breast, some sensitive of light fish resembling tilapia and salmon, popovers and or scones- ive got tons of assured and affordable recipies if you want them
just say"hello, reaction.."
I would stick with the brunch hypothesis. You could do a lot of different types of quiches, with different filling and cheeses and they could be served at room temperature as very well as any egg casserole, fritata etc... Blueberry french toast is an inexpensive alternative, find the recipe at Epicurious.com. You can have a watermelon picnic basket filled next to lots of fresh fruits. A large tossed salad on the side. And a couple of spiral sliced hams is a great thought for the meat on the side. Serve with mimosas (orange liquid and champagne) which you could also use for the toasts to the bride and groom. Congratulations and good luck on a long and ecstatic life together! :o)
Do you want a sit down brunch/lunch or a buffett? Here are some menu concept (not meant to do them all)
A fruit and cheese platter (buffett)
Fresh Fruit and Berry Medley fresh vanilla whip cream
Baked Brie served with baguette slices or berries
Mixed Baby greens salad
Hearts of Romaine Lettuce salad
Spinach and Strawberry salad
Crab or Salmon salad
Baked Garlic shrimp beside Lemon Butter and rice pilaf
Grilled Chicken Breast with Lemon and Rosemary served next to country gravy and roasted garlic mashed potatoes
Salmon of some type. Poached or broiled
Spinach and cheese quiche (make them as small individual sized (you can construct ahead and freeze)
Remember, It is important to hand over just as much thought to the presentation as it is the dishes themselves.
Even more importent is spending time near your guests and ENJOYING your day. There are no do-overs.
to put aside money, I made the dessert buffet for my wedding. I baked and froze several pies and cake in three months up to that time my wedding. We took them to the wedding/reception site the afternoon before.
Congratulations and Good luck

Instead of going near mid-morning wedding can you stir with a 1pm honeymoon and then own a desert reception? My husband and I did this and it was great. We have fresh fruit, a variety of cheeses and crackers, small foot held desserts, cake and wine. It was categorically wonderful and great for the budget!
If you are set on the mid morning then I would suggest a similar subject except also include tea sandwiches and veggies. People are bound to obtain their fill beside all that fruit, sandwich and desserts!
I would stick with a pale brunch menu - probably hors d'vors.
Things like mini-quiches and mini-cheesecakes are correct. Sandwiches made in tortillas and sliced into spirals, fruit, veggies, breakfast pastries. Most of those foods can be purchased frozen at bulk food stores and thawed/cooked back hand.
You can also tender an assortment of sparkling juices and collect money instead of serving alcohol since it is early.
I patently think street lamp finger foods would be a fun way to turn!
Have fun planning your event!
All the answers you have received are great but I hold a question for you.don't you hold enough on your plate next to getting married do you really want the stress of preparing all the food yourself. My suggestion is finalize a menu and ask your domestic and a few close friends for help by bringing an item on your menu. this will clutch the pressure off of you and you can savour your day!
