On a White Bed Sheet, paint or draw a picture of a famous building or place contained by Italy. Give it some color. Hang it up on a wall, people can help yourself to their picture in front of it. My mom did that for a carnival once. She painted the leaning tower of Pizza. It be cool. Cook authentic recipes for every one. Make mixed drinks, or drink wines. Put up lights, and favors near alot of colors. The flag colors are okay. Give out party favors that hold some Italian design on it, or something to that effect.
Play music by Italian singers. Or get a few performer, who know dances from Italy, and play Italian music.
Make the gala fun, and lively.
Rent casino games. Many Casino delegation suppliers have home bash packages for less than $1000 and they include dealer.

Frozen lasagne (can't beat home made, but it's alot easier)
Bagged salad
Baked ziti and sausage
Breadsticks
Shrimp within garlic butter

Red wine, plates of grapes, strawberries and cut melon.

We did a round robin once that was a blast. We have wine and crusty bread, cheese at one house, then salad and antipasto at the subsequent. Our third house was the key course but since that husband/wife were taking italian module they had us respectively order (up to 3 items each) everything (they have about 4 diff. dishes) ..this included the silverware and bowl, plate, napkin, etc. This be hysterical as we got literally what we ordered brought out to us (sometimes surrounded by paper cups we have to tip to our mouth if we didn't 'order' a bowl or spoon) Afterwards we all get to go to the kitchen to taster anything we hadn't tried yet. lastly we go to the last house for some italian pastries, cheesecake and coffee. It be fun and a way to draw from everyone involved.

fettucini alfredo will never fail! everyone loves it! unless you hold lactose intolerent people coming. but the fettucini next to some breadsticks, a big salad with italian salad dressing (at the olive garden restaurant they get rid of bottles of amazing salad dressing) and some great minastroni soup (sorry i dont know how to spell minastroni, but it is a great italian soup with little shell noodles surrounded by it and vegetables and some meat, normally ham).

There is no way that you could shift wrong with spaghetti for an Italian jamboree. Everyone likes spaghetti! Also bread sticks and salad. Red wine is other good next to pasta and a favorite Italian wine.
