I want something simple, affordable, but really delicious. My husband's a meat and potato mode of guy. I'm thinking maybe pasta or something. I'd approaching to hear other's ideas and opinion. Also- what for dessert?

You could do spagetti and meatballs and put some sausage in your sauce and rolls and serve an antipasta salad and some nice wine and after for dessert have cheese cake and fruit. It depends how expensive you want to budge. You can even do a them night resembling I did Italian night for 8 folks but it was kinda allot of work but TONS of fun.
We have beer, wine and soft drinks
appetizers i did shrimp cocktail and eggplant stuffed with mozz. chesse baked surrounded by the oven and topped with tomato and basil, grease salt & pepper and a antipasta salad afterwards for the main course but we lone had for a time of each so it seem like more food next ut was

and then for dessert we have fruit, cheese cake cannoils and I made everything from scratch and my friends brought an after dinner drink which we in recent times sipped but we set it on fire first it be a ball they hold on to asking when I am gonna have it again but it be ALLOT of work for me

not to sure about the menu but what ever you clear. try to make it ahead because you want to delight in your guest. you don't want to spent most of the time in the kitchen. possibly you can do it buffet style that way you don't own to keep running spinal column and forth to the kitchen.

Serves 4 to 6
Don’t slice the shrooms too skinny as they will soften earlier the onions or meat. Also try to buy USDA Choice grade beef; it will be worth for a moment more $$.
2 lb chuck roast
1 1/2 Tbsp flour
4 large pale onions
1 cup fresh mushrooms, sliced
1 tsp salt
1/4 tsp dried marjoram
1/4 tsp dried thyme
1/4 tsp ground black pepper
1 cup beef broth (from a can)
1 cup red burgundy wine (cheap stuff is okay)
Cut the meat into 1-inch cubes, trimming bad the fat as you travel. Dredge the meat in flour by pressing the chunks firmly into a bowl containing the flour.
Peel and slice the onions into 1/4 -inch rings. Wash the mush rooms by wipe with a watery cloth; slice 1/4-inch thick.
Add adjectives ingredients to the crockpot, cover and cook on low setting for 8 to 10 hours.
Serve over wide egg noodles or rice for a complete fast & easy breakfast time.

1 teaspoon ground dry mustard
1/4 teaspoon ground black pepper
3 cubes beef bouillon, crumbled
1 cup water
1 cup Burgundy wine
DIRECTIONS
Preheat oven to 350 degree F (175 degrees C).
Cook the beef on the stove over environment heat within a large, ovenproof pot or roaster until brown. Remove from steam and stir in flour until cubes are coated. Stir within carrots, celery and onions. Season beside salt, thyme, mustard, pepper and bouillon. Finally, pour surrounded by water and wine. Cover.
Bake surrounded by preheated oven 4 hours. Serve hot.

1 cup sour cream

2 teaspoons instant coffee granules dissolved contained by 1/4 cup hot water
1/4 cup coffee flavored liqueur
2 teaspoons vanilla extract
1 cup creamy whipping cream
2 tablespoons confectioners' sugar
2 tablespoons coffee-flavored liqueur
1 (1 ounce) square semisweet chocolate
DIRECTIONS
Preheat oven to 350 degrees F (175 degree C). Butter one 9 or 10 inch springform pan.

Pot Roast- I suggest 5#
4 or 5 medium potatoes, peel and cut
1# baby carrot
2 cans of undamaged green beans
1 envelope of lipton onion soup
1 can of cream of mushrooms
1 soup can of water
Place veggies around the roast and mix soup and river together and pour over roast. Cook for an hour depending on size of roast in 350 point oven.
Or try this,
Broccoli Stuffed Cornish Hens
10oz pkg frozen broccoli, cooked and drained well
2T. butter 1/4 tsp brackish
1c. cooked long grain rice (I use Success Rice)
Dash of pepper
1/2 c. shredded mild cheddar cheese (you may use shredded swiss cheese, or even cheese whiz)
4 cornish hens- rinsed and pat dry with quality newspaper towels.
Combine broccoli, rice, cheese, butter, salt and pepper.
Lightly saline cavities. Stuff birds near broccoli mixture.
Rub outside with shortening, and place surrounded by baking pan.
Bake at 350 scope for an hour and 15 minutes.
