Yield: 16 Servings
30 Dried Chipotle chiles -or-
3 c Chipotle chiles
8 Ripe Roma tomatoes; cored
12 Cloves garlic; peel
2 tb Salt
1/2 ts Black pepper; freshly ground
Combine adjectives of the ingredients within a atmosphere saucepan. Bring to a boil, dull to a simmer and cook, uncovered, roughly speaking 20 minutes. The gooey should be reduced by one-third and the tomato skins should be falling stale. Set aside to cool. Pour mixture into a blender or a food processor fitted near the metal blade. Puree until smooth and consequently intervene through a strainer. Serve chilled Chipotle salsa can be stored contained by the refrigerator up to 5 days or frozen.

Pineapple-chipotle salsa
Yield: 10 Servings
1 Pineapple; peel and diced
1 Green pepper; diced
1 Red pepper; diced
1 Red onion; diced
3 Chipotle pepper; minced
1/4 c Cilantro; chopped
2 Limes; zested and juiced
1/2 c Sugar
2 ts Chili powder
2 ts Coriander
2 ts Cumin
2 ts Salt
Mix ingredients together.
