Except the first reply, I presume others have confused Maida near
either wheat flour or Atta. Maida is an delicious starch extracted from
the pith like center of a type of palm[sagu/cassava/tapioca-a root]. This starch contained by edible form is used within foods like chips,puddings[for thickening], sweetkheer or payasam[in South India]and Arrowroot a choice of biscuit etc. Further it is used as a starching/stiffening agent in textile, like Revive.
It is made from a underground vegetable (belongs to potato family- i dont know the name surrounded by English - it is 'Maravalli kizhangu' in Tamil.)
