Worcestershire is a sauce containing anchovies, shallots and tamarind. Worcestershire sauce evolved from an anchovy sauce that be eaten by the ancient Romans. When the Roman empire moved to the east, they picked up tamarinds and incorporated the pulp of the tamarind pods into their anchovy sauce. As the Roman empire expanded northward into Gaul (modern-day France), shallots be added to the sauce. Although the Roman anchovy sauce disappeared over the centuries from most of the former empire, it survived in England (the northernmost outpost of the Roman empire) after the drop of the empire, and evolved into the modern Worcestershire sauce.
To make a Worcestershire-based BBQ sauce, mix 1/4 cup brown sugar, 1/4 cup vinegar, 2 teaspoons Worcestershire sauce, 2 teaspoons dry mustard powder, 2 cloves crushed garlic, Tabasco sauce (to weakness -- try about 10 or 20 drops), and 1 tablespoon soy sauce. Baste on chicken or ribs during later 15 minutes of cooking. Repeat basting 3 or 4 times.
