Panna cotta recipe?

I would like to be paid panna cotta and am confused will all the variation to the recipes.
Anybody own any great recipes they can share. I would prefer to start beside simple vanilla for now.

INGREDIENTS
1/3 cup skim milk
1 (.25 ounce) envelope unflavored gelatin
2 1/2 cups lashing cream
1/2 cup white sugar
1 1/2 teaspoons vanilla extract
DIRECTIONS
Pour milk into a small bowl, and stir in the gelatin powder. Set aside.
In a saucepan, stir together the brawny cream and sugar, and set over medium roast. Bring to a full boil, watching carefully, as the cream will hastily rise to the top of the pan. Pour the gelatin and milk into the cream, stirring until completely dissolved. Cook for one minute, stirring constantly. Remove from bake, stir in the vanilla and pour into six individual ramekin dishes.
Cool the ramekins uncovered at room warmth. When cool, cover with plastic wrap, and refrigerate for at lowest 4 hours, but preferably overnight before serving.
This one is a great simple recipe for plain vanilla, it's served with plums but you can really serve the vanilla panna cotta next to just give or take a few anything. http://ourhouse.ninemsn.com.au/ourhouse/...

450ml milk
450ml cream
1 vanilla bean, cut in partially lengthways
180g white chocolate
4 leaves gelatine, softened in cold wet
method
Panna Cotta

Gently heat the milk, cream, white chocolate and the vanilla bean together. Stir until the white chocolate have dissolved. Scrape out the vanilla bean while it is in the solution and discard the pod. Remove from the heat.

Gently squeeze the hose from the gelatine leaves and add the softened leaves to the cream mixture. Stir until the gelatine have dissolved.

When cool put the bowl of mixture into the refrigerator and keep stirring from time to time until the mixture is on the point of setting afterwards pour into 175ml moulds and refrigerate overnight.

Serve with biscotti, a blood plum sauce and berries (or your choice of fruit compote)
