Can someone recount me the easiest track to debone a fresh eel?

Okay, this is what my neighbor did:
Carefully cut around the head down to the bone. Then holding the "body" pause firmly pull the organizer end. The spine ,which is still attached to the come first, should slide out.
I don't know what kind of eel you are working next to, My mom had caught a river eel, and i.e. what our neighbor did.
