Whats the difference between cream and double cream?

The recipe say to use double cream for a mocha sauce, and i lone enjoy usual cream here, can i use that instead? Also can i use sugar instead of caster sugar? and can i chop cooking choc up instead of using cooking choc chips?

Answers:
for your closing two examine, the answer is YES. As contained by cream/double cream problem, the difference is surrounded by the cooking oil content. Double cream have AT LEAST 40%, and cream have at lowest 20%. As long as the recipe doesn't voice to beat it, I focus it's ok to substitute double cream to cream. In some cases you might take a slight difference within texture, but it won't ruin the adjectives entry.
