This have got to be a favorite of everyone surrounded by my family. It’s simple nonetheless incredibly delicious. It’s emphatically a great introduction for kids to seafood as it often starts ingestion contests as all the children within my family start stuffing their face. Problem is when the adults get involved. This recipe can also be found within our book Feast of the Seven Fishes.

You will need:
2-3 pounds of smelt
Flour
Red pepper flakes
Salt
Pepper
Olive grease

We usually buy the fish with the head already removed. Wash them and pat dry. Place a cup or so of flour along with some saline and pepper for taste into the newspaper bag. Now here comes a fork surrounded by the road: in my family circle, we would throw the smelt in the case and shake them up until they were covered within flour; my wife prefers dipping the fish in a batter of milk and egg prio to mixing near the flour-your choice. Take a cast iron skillet and join olive oil, along near some garlic and red pepper flakes adding to your savour. (We use a cast iron skillet, but can be replaced beside frying pan or wide fryer.)

Add the fish to the heated oil and cook until browned on respectively side. They cook quickly. When finished, drain the grease and place the fish on a paper towel on anything serving platter you choose (catch the excess oil). Then eat 'em total! If you like fish, you'll love smelt.
They are very cheap and sharp if you smother them on breadcrumbs and deep fry.
