Any ideas/recipes for kale?

I like kale, it is apparently a 'superfood' and full of vitamins and antioxidants. Does anyone own any ideas on how to include it contained by recipes or brand it interesting on its own? I'm on a diet so no fat please - approaching adding nuts or dressing. Any replies are welcome!

PORTUGUESE KALE SOUP

1 tablespoon olive oil
1 tablespoon finely chopped garlic
1/2 cup diced onions
1/2 cup diced carrot
1 bunch kale, stemmed and roughly chopped
6 ounces chopped chourico (spicy Portuguese sausage), or chorizo
3 bay leaves
2 tablespoons chopped fresh parsley leaves
2 tablespoons chopped fresh thyme leaves
6 cups beef stock
1 cup kidney beans
6 ounces diced tomatoes
10 ounces diced potatoes

In a substantial stock pot, heat the grease over medium-high heat. Add the garlic, onions, and carrot and cook for 5 minutes. Add the kale, chourico, bay leaves, parsley and thyme and mix all right. Add the beef stock, beans and tomatoes. Bring the soup to a boil, and then dampen the heat to low and simmer for 30 to 40 minutes.

Meanwhile, surrounded by a medium saucepan, bring salted hose down to a boil and add the diced potatoes. Cook until tender, in the order of 10 minutes. Drain the potatoes and add them to the soup. Remove the fjord leaves and serve hot.
I usually make a raspberry vinagerette next to walnuts fresh not the bottle kind.
I use a cup of fresh rapsberries blended next to vinegar and add the walnuts.

You can construct you own dressings without auxiliary oils and fresh ingredients. Good Luck!
try sauteing it contained by a little white wine beside salt and pepper. or try making a vinaigrette or including it contained by salads
I love this recipe, tho it does have some olive grease - which is not all desperate for you. I guess you could "sweat" the onions and garlic in for a while water til wilted too . .

Stir-fried Kale
2 tablespoons olive grease
1 onion, chopped
3 cloves garlic, minced
1/2 cup bread crumbs, toasted (easy to do in a dry skillet)
3 bunches kale, wash, dried and chopped
1-2 tablespoons lemon juice or balsamic vinegar, to aroma

Heat oil over environment high steam in a ample frying pan. Add onions, cook and stir until soft. Add garlic and cook and stir an added minute.

Add kale and a splash of water. Cover and cook until kale is wilted and shiny.

Add bread crumbs, lemon liquid or balsamic, salt and pepper, and serve.

this is biddable with cabbage too.
