Taco Soup
1-1 1/2 lbs. lean ground beef
1 onion, chopped
1 can beef broth (or 2 cups water + 2 beef boullion cubes)
1 can together kernel corn, undrained (I like the mix of white and wan corn)
2 cans diced tomatoes, any hotchpotch, undrained (I like petite diced, w/ onions and bellpeppers within them; if you want heat, use at smallest one can of Rotel)
1 can red or black beans, drained and rinsed
1 packet Taco seasoning
Garnishes (any or all):
sour cream
diced green onions
sliced black olives
sliced jalapenos
guacamole
shredded cheddar cheese
Brown ground beef over medium roast in roomy stock pot. When nearly cooked, add onions and sauté w/ ground beef. When onions are wilted but still creamy, stop cooking and drain off any chubby. Return to heat and put in remaining indredients. Cover and let simmer at lowest 30 minutes, or up to about 3 hours. (Can be held longer within a slow cooker set on Low.)
Serve in bowls w/ crushed corn chips surrounded by the bottom. Top each bowl w/ garnishing of choice.
Eggplant Supreme
2 pounds lean ground lamb, veal or ground sirloin
1 large eggplant
1 green bell pepper
1 6 ounce can tomato sauce
3 ounces tomato cement
1 cup fresh chopped parsley
4 large tomatoes
3 ounces hose
salt and pepper to zest
1 teaspoon sugar
Mix the ground beef with saline, pepper, sugar and 1/2 cup parsley. Slice the tomatoes about 3/8 inch glutinous. Cut eggplant in partially lengthwise and then cut respectively half into 1/2 inch slices.
Divide the ground meat into alike number of parts as you have slices of eggplant and tomato. Shape the meat into patty the same size as the eggplant.
Place a slice of eggplant on one finale of a 9 x 13 pan. Against the eggplant place a meat pasty, then a slice of tomato, consequently another piece of eggplant. Continue this until the dish is full.
This makes two rows beside any extra pieces tucked into the unfilled areas.
Mix the tomato sauce, tomato blend and water together until smooth. Pour over the top of the casserole. Chop the bell pepper and sprinkle it and the remaining parsley over the top.
Bake at 350 for 1.5 hours. Baste occasionally beside the pan juice.
