Sounds like a frozen dessert. To stop it melt you would have to fall the amount of coconut oil and append something that's going to make it more solid. Any more details you enjoy about the ingredients?
Coconut grease, aka coconut butter, has a melt point of 20°-25°C / 68°-78°F... Even if you keep the bar cold for storage, almost the moment you handle them at room warmth, with body grill and ambient heat combined, they'll disintegrate tremendously quickly. The stuff is simply 'built that way'... :-(
