The brown sugar and butter are what make the caramel coating. Maybe you can use Karo syrup instead but I haven't tried however. Look forward to seeing the answers to this question.
If you own some white sugar and some molasses, that can be a substitute. Drizzle a little of the molasses on the sugar and mix it near the back of a fork until it is evenly dispersed. That is brown sugar. You can quantify the darkness by accumulation a small amount at a time. Try one cup of sugar and one tablespoon of molasses at a time. If you don't have molasses, maple syrup (real) is pretty pious.
We make what we give the name monkey bread by rolling dough into bite size pieces and rolling them in butter and afterwards sugar/cinnamon.
