Does anyone own a really fitting recipe for Chocolate Biscuits?

Makes 20 biscuits

Ingredients:

1 oz or 25g cocoa powder
2 oz or 50g potato flour
2 oz or 50g rice flour
1 oz or 25g gram flour
1 oz or 25g ground almonds
3 oz or 75g granulated sugar
3 oz or 75g hard margarine or butter
1 egg


Instructions: Mix adjectives the dry ingredients together. Beat the egg before totalling with the butter and mix together until a soft dough is produced that sticks into a colossal ball.

Break the dough into walnut-sized pieces and place on a greased tray or non-stick baking parchment. Flatten respectively lump with the hindmost of a fork dipped in cold hose down.

Cooking:

Preheated oven gas mark 4 350°F 180°C Bake for 12 - 15 minutes. Cool on a lead rack.

Variations:

Add chopped nuts or crystallised ginger

Makes just about 24 cookies.

75g (1/2 cup) coarsely chopped macadamia nuts
150g butter, softened
160g (2/3 cup, very firmly packed) brown sugar
1/2 teaspoon vanilla extract (1 teaspoon unconscious vanilla essence)
1 large egg (we use eggs beside a minimum weight of 59g)
30g (1/4 cup) cocoa
40g (1/4 cup) cornflour
200g (1 1/3 cups) plain flour
1/2 teaspoon bicarbonate of soda
75g (1/2 cup) coarsely chopped white chocolate
90g (1/2 cup) raisins
50g (1/4 cup) milk chocolate chips

Preheat oven to 180 degree Celsius (160 degrees Celsius fan-forced). Line 2 life-size trays with baking serious newspaper.

Place macadamia nuts in a single division on a baking tray and bake for nearly 5-7 minutes, until a light golden colour. Set aside to cool.

Using an electric mixer or hand-held electric beaters, pound butter, brown sugar and vanilla on medium speed until muted and creamy. During mixing, stop the beaters a couple of times to scrape down the sides of the bowl. Add egg and pulsate until well combined.

Sift cocoa, cornflour, plain flour and bicarbonate of soda together into a hulking bowl, or directly into the bowl with the butter mixture. Stir dry ingredients into the butter mixture until merely combined. Stir in white chocolate, macadamia nuts, raisins and choc chips.

Roll rounded tablespoons of mixture into ball and place about 5 centimetres apart on prepared trays. Flatten ball slightly using the palm of your hand.
