Looking for a recipe for a moist, chunky Carrot Cake.?

I am looking for a recipe for a heavy, moist carrot cake beside a recipe also for a rich homemade cream cheese frosting. I am not interested in the carrot cake recipe that have pineapple in it. I want a really moist, dense cake, and the frosting must be sticky, creamy and sweet. Thanks in mortgage!

This is from my Aunt Mae. It is exactly what you are looking for. I have NEVER taste anything like it. It is GREAT. I hope you wallow in it as much as me and my family. Let me know when you construct it what you think. e-mail me. I GUARANTEE it is what you want.
2 Cups flour
2 tsp baking soda
1 tsp. saline
2 Cups sugar
2 tsp. cinnamon
4 egg whites (stiffly beaten)
1 and 1/2 cup salad oil (I use Crisco oil)
4 egg yolks
1/2 cup raisins (optional)
3 Cups grated carrot (about 8-9 )
1 cup chopped walnuts (optional)

In lg bowl add 1st 5 ing. To this make a payment oil, YOLKS and blend till economically mixed with mixer. FOLD contained by stiffly beaten egg whites, carrot, nuts and raisins. bake within greased 13x9x2 pan 45 minutes at 350 degree or till done when tested with toothpick.

Cream Cheese Frostrng:
8 oz. cream cheese (room temp)
1/4 cup butter
2 tsp. vanilla
2 Cups powder sugar (may call for little more...depends on consistency you want)
I double the icing because I like it HEAVY on my cake. lol
Keep cake chilled after icing it. (and covered.)

To get a heavier cake you call for more eggs, of course the other ingredients would hold to correspond to the addition of more eggs.

My homemade cream cheese frosting is as follows: 8 oz. brick cream cheese (softened), 1 tsp vanilla and 1/2 to 3/4 cup powdered sugar. Whip the cream cheese with a appendage held blender and then put in the vanilla. Add 1/2 cup of powdered sugar. It's your call whether you want to append more powdered sugar.

Cake:
1/2 c Cocoa
2 c Flour
2 c Sugar
2 ts Baking soda
4 Eggs
1 ts Vanilla
1 1/2 c Vegetable oil
2 c Grated carrot
1 c Undrained crushed pineapple
Icing:
8 oz Cream cheese
1 Butter
1 Powdered sugar
1/2 c Coconut
1 c Chopped nuts

Preheat oven to 350. Combine cocoa, flour, sugar, baking
soda, and salt. In a separate bowl, mix together eggs,
vanilla, and grease. Add egg mixture to cocoa mixture and mix
well. Stir within carrots and pineapple and Pour into three 9
inch round greased cake pan. Bake 30 minutes or until
toothpick inserted in center comes out verbs. Cool cake.
Icing: combine cream cheese, butter, and powdered sugar
and beat in good health. Fold in coconut and nuts. Spread on carrot
cake and refrigerate until in place to serve.

1 1/2 cups grease
2 cups sugar
4 eggs
2 cups flour
2 teaspoons baking soda
1 pinch salt
3 cups grated carrot (fully packed)
2 teaspoons cinnamon
1 teaspoon vanilla

Icing
1/4 lb butter
8 ounces cream cheese
1 lb powdered sugar

Beat oil and sugar, next add eggs.
Add and mix the rest of the cake ingredents within the order given Beat for 1 minute.
Pour into 3 9" cake pan.
Bake at 350 degrees for 35 minutes.
Icing: Mix butter and cream cheese together until smooth, afterwards add sugar for a moment at a time.
Beat until smooth.

INGREDIENTS:
2 cups sugar
3 cups all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 teaspoon ground cinnamon
2 cups grated carrot
1 1/3 vegetable oil
2 eggs, battered
1 cup chopped pecans
1 cup drained crushed pineapple
2 teaspoons vanilla extract
1/2 teaspoon lemon extract
1/2 teaspoon almond extract

PREPARATION:
Combine dry ingredients in a sizeable mixing bowl. Add carrots, grease, and eggs. Beat until well mixed. Stir surrounded by remaining ingredients. Put batter in two 9x5x3-inch loaf pan. Bake at 350° for 1 hour. Frost with cream cheese frosting or polish as desired.

INGREDIENTS:
1 package (3 ounces) cream cheese
1 tablespoon reheat water
1 teaspoon vanilla extract
3 cups sifted confectioners' sugar
PREPARATION:
Beat cream cheese next to water and vanilla; at a snail`s pace add sugar, spanking until smooth and spreading consistency. Makes 1 1/2 cups, enough to frost top and sides of a 9-inch square cake or top of a 13 x 9-inch cake Double recipe for a lode cake.
