I need a recipe for a moderate to gelatinous pizza crust (I'm going for chewy rather than crispy) that I can engineer without the theatrics. (I won't be throwing dough over my go before anytime soon). Any ideas?

I'll dispense you the recipe of Iain Hewitson (Hewie) from Oz. I atually halve this because I resembling a thin crust, but respectively to their own.
1 cup of lukewarm water
1 tbspn of dry yeast
1 cup of strong, bread flour
pinch of sugar
Combine the ingredients, stir until blended and leave your job for 5 or so minutes until foaming. (This is called proving and serves to ensure the yeast is still active)
1 tspn of brackish
1 1/2 cups of plain flour
Add the salt to the dough and after up to 1 1/2 cups of flour, until the mixture is no longer sticky. Knead until smooth and elastic. Put contained by a large bowl, cover near kitchen wrap and leave for approx 1 hour, until doubled.
Punch down the dough and agree to it rise again, covered, until once again doubled.
Dough is now all set to use.
No Yeast Pizza Crust Recipe
This is a good recipe if you don't own any yeast or don't have time for dough to rise.
2 cups adjectives purpose flour
1 tbsp baking powder
1/4 tsp salt
2/3 cup hose down
1 tbsp cooking oil
Preheat oven to 400 degree. Prepare pizza pan by spraying beside non-stick cooking spray. Combine dry ingredients in mixing bowl. Add liquid and stir to incorporate dry ingredients. Knead dough by hand 6-8 times on a weakly floured surface. Roll dough thinly. Place rolled dough onto prepared pizza vessel, add favorite sauce and toppings. Bake at 400 degree for 18-20 minutes, depending on crust thickness.
This is the best one I own found.

2 tbsp olive grease
3 / 4 tsp salt
3 c. bread flour
2 tsp FLEiSCHMANN'S Bread Machine Yeast
2 tsp dried basil
1 clove finely minced garlic
Add dough ingredients to bread gadget pan surrounded by the order suggested by factory owner. Select "dough/manual" cycle.
When cycle is complete, remove dough from machine to a insubstantially floured surface. Divide in partly; shape each into a globe. Roll each to 12-inch circle. Place on greased pizza panns; form a standing rim by pinching the end of the dough. Let dough rest 10 minutes. Prick dough with fork by chance.
Parbake at 400 deg.F for 10 minutes. Remove from pans: place on line cooling racks. Spread and dress as desired and bake on flex oven rack at 400 deg.F for 15 to 18 minutes or until crust is golden.
