Easy and vigorous main dish near mixed Vegetables and Red Pesto
Ingredients:
* 175 g Penne Pasta
* 1 Red Pepper, cut into chunks
* 1 large Onion, heavily sliced
* 1 clove garlic, finely chopped
* A handful of Cherry Tomatoes
* A handful of fresh Spinach leaves
* 2 tbsp Red Pesto
* 300 g Mushrooms, quartered
* 50 g Cheddar Cheese, grated
* 1 tbsp Olive grease
* Black Pepper
Method:
* Preheat the oven to 200 C/ gas mark 6.
* Mix pepper, onion and mushrooms within a roasting dish and drizzle with olive grease. Cook in the oven for 20 minutes.
* Add tomatoes to the vegetables and roast for another 10 minutes.
* Meanwhile cook penne until al dente and drain.
* Mix the penne beside pesto, then tip the penne to the vegetable tray next to spinach and mix well. Scatter next to grated cheese and black pepper and cook in the oven for another 5 minutes.

Ginger Flank Steak with Wasabi Smashed Potatoes
INGREDIENTS
2 inches fresh ginger root, peel and grated
1/4 cup tamari aged soy sauce
2 limes, zested and juiced
3 tablespoons vegetable oil, eyeball it
2 tablespoons grill seasoning (recommended: Montreal Steak Seasoning by McCormick)
2 pounds flank steak
2 1/2 to 3 pounds Idaho potatoes, 4 huge potatoes, peeled and cut into chunks
Salt
1/4 to 1/3 cup cream
1 to 2 tablespoons wasabi attach - how hot do ya like it?
4 scallions, root shutting down trimmed
Handful cilantro leaves
DIRECTIONS
Preheat a grill pan or indoor/outdoor grill to large.
Combine ginger, tamari, lime juice, grease and grill seasoning in a generous sealable plastic bag. Add meat to marinade and coat evenly. Let stand 10 minutes later grill meat 6 to 7 minutes on each side.
Place potatoes surrounded by a pot and cover with dampen. Bring to a boil, salt the potatoes and cook until tender, 10 to 12 minutes. Drain potatoes and join them back to the hot pot. Smash the potatoes beside a masher to desired consistency with the cream and wasabi. Adjust brackish, to taste.
While potatoes and meat cook, finely chop the scallions together next to cilantro and lime zest.
Let meat rest 5 minutes then lightly slice on an angle against the grain. Serve meat on pulp potato mounds with a side dishes with a giving sprinkling of the chopped scallion-cilantro-lime zest.
